Global chef comes to WVU this week, campus community invited to lunch events

WVU Dining Services will host Global Chef Robert Janse, who will bring the flavors of the Netherlands to West Virginia University. 

As part of Dining Services’ continuing efforts to elevate and enhance the dining experience with unique offerings and educational and interactive experiences, the University will host a global chef for the second semester in a row. 

Janse will come to the state today (Oct. 23) and educate WVU Dining Services’ chefs, cooks and food service workers on how traditional dishes in the Netherlands are prepared. The chefs then will prepare the food under his direction for two special lunches.

The first lunch will be from 11 a.m. to 2 p.m. Thursday (Oct. 24) at Hatfields and will feature: 

  • Goat cheese salad with Dutch strawberries, walnuts, Tahoon cress and balsamic syrup

  • Baked bistro steak with sweet potato puree

  • Green asparagus and sauce of VOC spices

  • Mashed potatoes with kale, smoked sausage with pickles and baked bacon

  • Farmer boys (yogurt curd with amoretti, soaked raisins) and atsina cress

The second lunch will be from 11 a.m. to 2 p.m.Friday (Oct. 25 ) at Café Evansdale and will feature: 

  • Pea soup and asparagus soup with rye bread

  • Dutch Reypenaer salad (aged gouda cheese with egg, smoked ham, grape tomatoes, shaved cucumbers and fresh garden herbs)

  • Goat cheese and strawberry salad (walnuts, watercress and balsamic syrup topped with sliced strawberries and crumbled goat cheese)

  • “Kibbeling cod” Dutch fish and chips with fennel and carrot salad and farmers fries

  • Smoked sausage with kale whipped potatoes, gravy and baked bacon, served with sweet pickles, white vinegar and coarse mustard

  • Dutch beef stew with onions, potato puree and red cabbage finished with cinnamon apples

  • Chocolate mousse with strawberries and stroopwafel (Dutch waffle cookie)

  • Stuffed gingerbread with whipped cream

  • Farmer boys 

Both lunches promise to be an experience that shouldn’t be missed. 

Janse currently is spending a one-month residency in the United States, visiting select cafes and dining halls and sharing his culinary experience as part of the Sodexo Global Chef program. This experience will allow Janse, students, patrons and our local culinary team to share authentic Dutch cuisine and culture.
